Mix the ground pork with soy sauce, sesame oil, minced ginger, and chopped scallions.
Place a small spoonful of filling in the center of each wonton wrapper, wet the edges with water, and fold into a pouch, pressing to seal.
Bring the chicken stock to a simmer with the ginger slices and season with salt and white pepper.
Drop the wontons into a separate pot of gently boiling water and cook for 4-5 minutes until they float and the filling is cooked.
Lift the cooked wontons into serving bowls with a slotted spoon.
Add the greens to the hot stock and simmer 1 minute, then ladle the broth over the wontons.
Garnish with extra scallions and serve hot.
