Ingredients
Steps
Whisk the egg yolks and sugar together over a pot of simmering water for about 5 minutes until pale, thick, and doubled in volume, then cool slightly.
Whisk in the mascarpone until smooth.
In a separate bowl, whip the cream to soft peaks, then fold it gently into the mascarpone mixture.
Mix the cooled coffee with the liqueur in a shallow dish and dip each ladyfinger for about 1 second per side — don't soak them soggy.
Layer half the dipped ladyfingers in a dish, spread half the mascarpone cream on top, then repeat with a second layer.
Cover and chill at least 4 hours, or overnight, then dust with cocoa powder right before serving.
