Melt the butter and sugar together in an ovenproof skillet over medium heat until it turns a deep amber caramel.
Remove from heat and arrange the apple halves tightly in the caramel, rounded side down.
Return the pan to low heat and cook for 10 minutes so the apples soften slightly.
Roll the puff pastry to fit the pan and lay it over the apples, tucking the edges down around them.
Bake at 200°C (400°F) for 25-30 minutes until the pastry is puffed and golden.
Let the tart cool in the pan for 10 minutes, then place a plate over the top and carefully flip.
Serve warm with cream or ice cream.
