Whisk the eggs with dashi, soy sauce, sugar, and salt until smooth.
Lightly oil a rectangular tamagoyaki pan or a small nonstick skillet over medium-low heat.
Pour in a thin layer of the egg mixture, tilting the pan to cover the base.
Once mostly set, roll the egg up to one side of the pan using chopsticks or a spatula.
Oil the empty part of the pan, pour in another thin layer, letting it flow under the rolled egg, and roll again to add another layer.
Repeat until all the egg mixture is used and you have a multi-layered log.
Let cool slightly, then slice into pieces and serve.
