Mix the ground meat, breadcrumbs, egg, half the garlic, and parsley in a bowl and season well.
Roll the mixture into small meatballs.
Heat the olive oil in a skillet and brown the meatballs on all sides, then set aside.
In the same skillet, cook the onion for 5 minutes until soft, then add the remaining garlic and paprika.
Stir in the tomatoes and stock and bring to a simmer.
Return the meatballs to the pan, cover, and simmer for 20 minutes until cooked through.
Season to taste and serve with crusty bread.
