Blind-bake the pastry at 190°C / 375°F for 20 minutes, remove the weights, and bake 5 more until dry.
Fry the lardons until crisp and drain them.
Whisk the eggs, yolks, cream, milk, nutmeg, salt, and pepper without making it foamy.
Scatter the bacon and cheese in the shell and pour the custard over.
Bake at 160°C / 325°F for 35–40 minutes until barely set with a slight wobble, then cool 20 minutes before cutting.
