Mix the garlic, soy sauce, paprika, cumin, oil, lime juice, oregano, salt, and pepper into a paste.
Rub the paste all over the chicken, under the skin where you can, and marinate at least 1 hour or overnight in the fridge.
Roast at 200°C (400°F) for about 60 to 70 minutes, until the juices run clear and skin is deep golden.
Meanwhile, blend the cilantro, jalapeño, mayonnaise, garlic, and lime juice with a splash of water into a smooth green sauce.
Rest the chicken 10 minutes, then carve.
Serve with the green sauce and fries or rice.
