Heat the milk, oil, and salt in a small pot until just simmering, then pour over the tapioca starch in a bowl and stir.
Let cool 10 minutes, then knead in the eggs one at a time until smooth (it'll be sticky).
Knead in the grated parmesan or cheddar until fully combined.
Roll into golf-ball-sized balls with oiled hands and place on a lined baking sheet.
Bake at 200°C (400°F) for 18 to 20 minutes until puffed and golden.
Serve warm.
Dough freezes well raw — bake straight from frozen, adding a few extra minutes.
