  1. Brown the beef in the oil in batches and set aside.

  2. Fry the curry paste in the same pot 2 minutes, then add 200 ml of the coconut milk and cook until the oil splits out.

  3. Return the beef with the remaining coconut milk, stock, cardamom, and cinnamon; simmer covered on low 90 minutes.

  4. Add the potatoes, onion, and peanuts and cook uncovered 30 minutes until the beef is tender.

  5. Balance with the fish sauce, sugar, and tamarind — it should read salty, sweet, and sour at once.

Season only at the end; the sauce concentrates as it reduces.
