Brown the beef in the oil in batches and set aside.
Fry the curry paste in the same pot 2 minutes, then add 200 ml of the coconut milk and cook until the oil splits out.
Return the beef with the remaining coconut milk, stock, cardamom, and cinnamon; simmer covered on low 90 minutes.
Add the potatoes, onion, and peanuts and cook uncovered 30 minutes until the beef is tender.
Balance with the fish sauce, sugar, and tamarind — it should read salty, sweet, and sour at once.
Season only at the end; the sauce concentrates as it reduces.
