Fry the black bean paste in 3 tbsp oil over low heat for 3 minutes, then set it aside — this removes the raw edge.
Brown the pork in the remaining oil, then add the onion, potato, and zucchini and cook 6 minutes.
Stir the fried paste back in with the sugar and water and simmer 10 minutes until the potato is tender.
Add the cornstarch slurry and cook 1 minute until glossy.
Boil the noodles, drain, and top with the sauce and raw cucumber.
