Melt the butter and cook the onion for 5 minutes until soft.
Stir in the flour and cook for 2 minutes to make a paste.
Gradually whisk in the warm milk, stirring constantly until thick and smooth.
Stir in the ham, season with salt, pepper, and a pinch of nutmeg, and cook 2 more minutes.
Spread the mixture into a dish and chill for at least 2 hours until firm.
Shape the chilled mixture into small logs, then coat in flour, beaten egg, and breadcrumbs.
Heat oil in a deep pot to 180°C (350°F) and fry the croquettes in batches until golden, about 2-3 minutes.
Drain on paper towels and serve hot.
