Steps
Bring the water, sugar, salt, and oil to a boil in a saucepan.
Remove from heat and stir in the flour all at once until a smooth dough forms.
Beat in the egg until fully incorporated and glossy.
Spoon the dough into a piping bag fitted with a star tip.
Heat 5 cm of oil in a deep pot to 190°C (375°F) and pipe 10 cm strips of dough directly into the oil, frying until golden, about 3 minutes per side.
Drain on paper towels and roll in the cinnamon sugar while warm.
Warm the milk and chocolate together, whisking until smooth and thick.
Serve the churros warm with the chocolate sauce for dipping.
