If using dried beans, drain the soaked beans and simmer in fresh water for 45 minutes until just tender, then drain.
Sear the duck legs and sausages in a large ovenproof pot until browned, then set aside.
Cook the bacon, onion, and carrots in the same pot for 8 minutes until soft.
Add the garlic, tomatoes, stock, bay leaves, and beans, then nestle the duck legs and sausages back in.
Season with salt and pepper, cover, and bake at 160°C (325°F) for about 1 1/2 hours.
Uncover, sprinkle breadcrumbs over the top, and bake uncovered for 20-30 more minutes until a golden crust forms.
Rest for 10 minutes before serving.
