Heat the oil in a large pot and cook the onion, carrots, and celery over medium heat for 6-7 minutes.
Add the garlic and cook 1 minute more.
Stir in the split peas, ham, stock, and bay leaf and bring to a boil.
Lower the heat and simmer partially covered for 60-75 minutes, stirring occasionally, until the peas break down and the soup thickens.
Remove the ham hock, shred the meat, and stir it back into the pot (skip this if using diced ham).
Discard the bay leaf, season with salt and pepper, and serve hot.
