  1. Preheat the oven to 180°C (350°F). Cook the pasta until just shy of al dente, then drain.

  2. Cook the onion in olive oil for 5 minutes, then add the beef and brown well, about 8 minutes.

  3. Add the garlic, tomatoes, cinnamon, allspice, salt, and pepper. Simmer uncovered 20 minutes until thickened.

  4. For the bechamel, melt the butter, whisk in the flour, and cook 1 minute. Slowly whisk in the milk and cook, stirring, until thickened, about 5-7 minutes.

  5. Off heat, whisk the egg yolks, half the parmesan, and nutmeg into the bechamel.

  6. Layer half the pasta in a baking dish, top with all the meat sauce, then the remaining pasta.

  7. Pour the bechamel evenly over the top and sprinkle with the remaining parmesan.

  8. Bake for 30-35 minutes until golden and set. Let rest 10 minutes before slicing.
