Simmer the chicken with the onion, cinnamon, cardamom, and water for 30 minutes; keep the broth and discard the whole spices.
Heat the oven to 220°C / 425°F. Toss the eggplant and cauliflower with the oil and roast 25 minutes until browned.
Layer the chicken in the bottom of a heavy pot, then the vegetables, then the drained rice tossed with the allspice, turmeric, and salt.
Pour over 800 ml of the hot broth, bring to a boil, then cover and cook on low 25 minutes.
Rest off the heat 15 minutes, run a knife around the edge, and invert onto a platter in one motion.
Serve with yogurt, pine nuts, and parsley.
The rest before flipping is what holds the shape together.
