Preheat the oven as hot as it will go, ideally 250°C (480°F), with a baking sheet inside to heat up.
Mix the ground meat with onion, tomatoes, red pepper, garlic, tomato paste, spices, parsley, olive oil, salt, and pepper until well combined.
Spread a thin, even layer of the meat mixture over each flatbread round, going all the way to the edges.
Slide the topped breads onto the hot baking sheet and bake for 10-12 minutes until the edges are crisp and the meat is cooked through.
Squeeze fresh lemon juice over each one and top with sliced onion and parsley.
Roll up or fold to eat, like a wrap.
