Blend the scallions, Scotch bonnet, ginger, garlic, brown sugar, soy sauce, lime juice, oil, thyme, allspice, cinnamon, nutmeg, salt, and pepper into a smooth marinade.
Coat the chicken thoroughly with the marinade and refrigerate at least 2 hours, or overnight for best flavor.
Preheat a grill to medium heat.
Grill the chicken, turning occasionally, for 30-35 minutes until charred outside and fully cooked, moving pieces to a cooler part of the grill if they brown too fast.
Let rest 5 minutes before serving.
