Brown the lamb in batches in the oil in a large pot, then set aside.
Cook the onions, carrots, and celery in the same pot for 5-6 minutes.
Return the lamb to the pot, add the potatoes, stock, bay leaves, and thyme.
Bring to a boil, then cover and simmer on low for 1.5-2 hours until the lamb is tender.
Season with salt and pepper, remove the bay leaves, and stir in the parsley before serving.
