Brown the sausages and bacon in a large pot, then remove and set aside.
Layer the onions and potatoes in the pot, then place the sausages and bacon on top.
Pour in the stock so it comes about halfway up, add the bay leaves, and season.
Cover and simmer gently on low for 1-1.5 hours until the potatoes are soft and everything is tender.
Remove the bay leaves, scatter with parsley, and serve straight from the pot.
