Cook the onion in olive oil for 5 minutes until soft, then stir in the rice, dill, mint, and half the lemon juice.
Cook 2 minutes, then season and let the filling cool slightly.
Lay a grape leaf flat, place a spoonful of filling near the stem, fold the sides in, and roll up tightly.
Repeat with the remaining leaves and filling.
Line the bottom of a pot with a few spare leaves and pack the rolls in tightly, seam side down.
Pour over the stock and remaining lemon juice, then cover with a plate to weigh the rolls down.
Simmer covered on low heat for 45 minutes until the rice is tender.
Cool slightly and serve with extra lemon wedges.
