Heat the oven to 200°C (400°F) and fit one pie crust into a 23cm pie dish.
Toss the sliced apples with sugar, flour, cinnamon, and lemon juice in a large bowl.
Pile the apples into the crust and dot the top with the butter pieces.
Cover with the second crust, crimp the edges to seal, cut a few vents, and brush with beaten egg.
Bake 20 minutes, then lower the heat to 180°C (350°F) and bake 30-35 minutes more until the crust is deep golden and juices bubble through the vents.
Cool at least 2 hours before slicing so the filling sets.
